5/5

Zucchini and Goat Cheese Frittata is a protein-rich and flavorful option for individuals following an Indian weight loss diet:

  • Eggs provide high-quality protein and essential nutrients, supporting muscle maintenance and satiety.

  • Zucchini adds vitamins, minerals, and dietary fiber to the frittata.

  • Goat cheese offers a tangy and creamy element, enhancing the taste without excessive calories.

  • Fresh herbs provide additional flavor and antioxidants.

INGREDIENTS

  • 6 large eggs
  • 1 medium zucchini, thinly sliced
  • 1/4 cup crumbled goat cheese
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh herbs (such as basil or thyme)
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for greasing

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).

  2. In a skillet, heat the olive oil over medium heat.

  3. Add the chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion is translucent.

  4. Add the thinly sliced zucchini to the skillet and sauté for another 3-4 minutes until the zucchini is softened. Season with salt and pepper.

  5. In a bowl, whisk the eggs until well beaten. Add the chopped fresh herbs and season with a pinch of salt and pepper.

  6. Grease a round baking dish or oven-safe skillet with cooking spray or a little olive oil.

  7. Spread the sautéed zucchini and onion mixture evenly on the bottom of the baking dish.

  8. Pour the beaten eggs over the zucchini mixture.

  9. Sprinkle crumbled goat cheese evenly over the top.

  10. Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the frittata is set and slightly golden on top.

  11. Remove the frittata from the oven and let it cool slightly before slicing.

  12. Slice the Zucchini and Goat Cheese Frittata into wedges and serve warm.

TIPS

  1. Customize the frittata by adding other vegetables like bell peppers, spinach, or tomatoes.

  2. Be mindful of portion sizes to control your calorie intake, especially if you’re aiming to lose weight.

  3. Use a non-stick skillet or oven-safe dish to prevent sticking.

  4. Enjoy the Zucchini and Goat Cheese Frittata as a protein-rich breakfast, brunch, or light meal.
