5/5

Zucchini and Cottage Cheese Roll-Ups offer a balance of textures and flavors with the delicate zucchini slices wrapped around a creamy and herby cottage cheese filling. These roll-ups make for a tasty and wholesome appetizer or snack option.

INGREDIENTS

For the Zucchini Roll-Ups:

  • 2-3 medium zucchinis
  • Olive oil
  • Salt and pepper

For the Cottage Cheese Filling:

  • 1 cup low-fat cottage cheese
  • 2 tablespoons fresh herbs (such as basil, parsley, or chives), finely chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

INSTRUCTIONS

For the Zucchini Roll-Ups:

  1. Wash and trim the ends of the zucchinis. Use a mandoline or a vegetable peeler to thinly slice the zucchinis lengthwise into long strips.

  2. Preheat a grill pan or a non-stick skillet over medium heat. Brush the zucchini slices with a bit of olive oil on both sides to prevent sticking.

  3. Grill or sauté the zucchini slices for about 1-2 minutes on each side, or until they are slightly softened and have grill marks. Remove from heat and set aside to cool.

For the Cottage Cheese Filling:

  1. In a bowl, combine the low-fat cottage cheese, finely chopped fresh herbs, lemon zest, salt, and pepper. Mix well to incorporate the flavors.

  2. Taste the cottage cheese filling and adjust the seasonings as needed.

To Assemble:

  1. Lay out the grilled zucchini slices on a clean surface.

  2. Place a spoonful of the cottage cheese filling at one end of each zucchini slice.

  3. Gently roll up the zucchini slice around the cottage cheese filling to create a roll-up.

  4. Secure the roll-up with a toothpick if needed.

Serve:

  • Serve the Zucchini and Cottage Cheese Roll-Ups as a light and refreshing appetizer or snack.

  • These roll-ups can be served cold or at room temperature.

TIPS

  • You can customize the cottage cheese filling by adding ingredients like minced garlic, diced bell peppers, or a drizzle of balsamic vinegar.

  • For extra flavor, you can sprinkle some chopped nuts (such as almonds or walnuts) on top of the cottage cheese filling before rolling up the zucchini slices.
