  • 1 medium zucchini, grated
  • 1 cup corn kernels (fresh or frozen)

  • 1/4 cup chopped fresh parsley
  • 2 green onions, thinly sliced
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 2 tablespoons olive oil

INSTRUCTIONS

  1. In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, Parmesan cheese, parsley, green onions, baking powder, salt, and black pepper. Mix well.
  2. In a separate small bowl, whisk together the eggs, milk, and olive oil.
  3. Pour the egg mixture over the zucchini and corn mixture. Stir until all the ingredients are well combined.
  4. Heat a non-stick skillet or griddle over medium heat. Add a small amount of oil to the skillet to prevent sticking.
