- 2 green onions, thinly sliced
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 1/4 cup milk
- 2 tablespoons olive oil
INSTRUCTIONS
- In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, Parmesan cheese, parsley, green onions, baking powder, salt, and black pepper. Mix well.
- In a separate small bowl, whisk together the eggs, milk, and olive oil.
- Pour the egg mixture over the zucchini and corn mixture. Stir until all the ingredients are well combined.
