INSTRUCTIONS

  2. Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. This will prevent the rice from sticking to the mat.
  3. Place a nori sheet on the bamboo mat. Wet your hands with water to prevent the rice from sticking to them.
  4. Take a handful of sushi rice and spread it evenly over the nori sheet, leaving a small border at the top.
  5. Arrange the thinly sliced vegetables in a row along the bottom edge of the nori sheet.
  6. Using the bamboo mat, tightly roll the nori sheet and rice over the vegetables. Apply gentle pressure to ensure a tight roll.
  7. Wet a sharp knife with water and slice the sushi roll into bite-sized pieces.
  8. Repeat the process with the remaining ingredients.
  9. Serve the veggie sushi rolls with soy sauce, pickled ginger, and wasabi.
