Vegetable Pulav is a flavorful and aromatic rice dish made with basmati rice, mixed vegetables, and a blend of spices. It is a popular one-pot meal in Indian cuisine and is often served as a main course. The combination of fragrant spices and colorful vegetables makes it a visually appealing and delicious dish.
INGREDIENTS
- 1 cup basmati rice
- 2 cups water
- 1 tablespoon ghee (clarified butter) or oil
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 2-3 cloves
- 2-3 green cardamom pods
- 1 medium-sized onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 1 green chili, finely chopped (optional)
- 1 cup mixed vegetables (such as carrots, peas, beans, bell peppers), chopped
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, for garnishing
INSTRUCTIONS
- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large saucepan, heat ghee or oil over medium heat. Add cumin seeds, cinnamon stick, cloves, and cardamom pods. Saute for a minute until fragrant.
- Add the sliced onions and cook until they turn golden brown.
- Add ginger-garlic paste and green chili (if using), and saute for another minute.
- Add the mixed vegetables to the pan and saute for 2-3 minutes until they are slightly cooked.
- Add turmeric powder, garam masala, and salt. Mix well to coat the vegetables with the spices.
- Drain the soaked rice and add it to the pan. Stir gently to combine the rice and vegetables.
- Add 2 cups of water to the pan and bring it to a boil. Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Once the rice is cooked, turn off the heat and let it sit covered for 5 minutes.
- Fluff the rice gently with a fork. Garnish with fresh coriander leaves.
- Serve the Vegetable Pulav hot with raita (yogurt sauce) or any curry of your choice.
TIPS
- Soaking the rice helps to achieve fluffy and separate grains. However, if you are short on time, you can skip this step.
- Use good-quality basmati rice for the best results. The long-grain rice adds a pleasant aroma and texture to the pulav.
- You can customize the vegetables based on your preference. You can add or omit vegetables according to availability and taste.
- Adjust the spice levels by adding more or less green chili and garam masala according to your preference.
- Serve Vegetable Pulav with raita (yogurt sauce), pickle, or any curry of your choice for a complete and satisfying meal.
- Leftover pulav can be refrigerated and enjoyed the next day. Simply reheat it in a microwave or stovetop and serve.
