INGREDIENTS
- 1 cup basmati rice
- 1 tablespoon ghee or oil
- 1 onion, thinly sliced
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 green chili, finely chopped
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)

For Mint Raita:
- 1 cup plain yogurt
- 1/2 cup finely chopped mint leaves
- Salt to taste
INSTRUCTIONS
- Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- Heat ghee or oil in a large pan or pot. Add cumin seeds and let them splutter.
- Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and green chili. Cook for a minute until fragrant.
- Add the mixed vegetables and sauté for 2-3 minutes.
- Add turmeric powder, garam masala, and salt. Mix well to coat the vegetables.
- Add the soaked and drained rice to the pot. Stir gently to combine the rice with the vegetables.
- Add 2 cups of water and bring it to a boil. Reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes or until the rice is cooked and fluffy.
- While the pulao is cooking, prepare the Mint Raita. In a bowl, mix together yogurt, finely chopped mint leaves, and salt.
- Once the pulao is cooked, fluff it up with a fork and let it rest for a few minutes.
- Serve the Vegetable Pulao hot, garnished with fresh cilantro leaves, along with Mint Raita on the side.
