Vegetable Pulao with Mint Raita is a flavorful and aromatic rice dish cooked with a mix of colorful vegetables and spices. The pulao is perfectly complemented by the cooling and refreshing Mint Raita, making it a delightful and satisfying meal.

INGREDIENTS

  • 1 cup basmati rice
  • 1 tablespoon ghee or oil
  • 1 onion, thinly sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, finely chopped
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, for garnish

For Mint Raita:

  • 1 cup plain yogurt
  • 1/2 cup finely chopped mint leaves
  • Salt to taste

INSTRUCTIONS

  1. Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. Heat ghee or oil in a large pan or pot. Add cumin seeds and let them splutter.
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste and green chili. Cook for a minute until fragrant.
  5. Add the mixed vegetables and sauté for 2-3 minutes.
  6. Add turmeric powder, garam masala, and salt. Mix well to coat the vegetables.
  7. Add the soaked and drained rice to the pot. Stir gently to combine the rice with the vegetables.
  8. Add 2 cups of water and bring it to a boil. Reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes or until the rice is cooked and fluffy.
  9. While the pulao is cooking, prepare the Mint Raita. In a bowl, mix together yogurt, finely chopped mint leaves, and salt.
  10. Once the pulao is cooked, fluff it up with a fork and let it rest for a few minutes.
  11. Serve the Vegetable Pulao hot, garnished with fresh cilantro leaves, along with Mint Raita on the side.
