INSTRUCTIONS
Instructions for Vegetable Khichdi:
Wash the rice and lentils together under running water until the water runs clear. Soak them in water for 20 minutes, then drain and set aside.
Heat ghee or oil in a pressure cooker or large pot. Add cumin seeds and let them sizzle.
Add the chopped onions and sauté until they turn golden brown.
Add the chopped tomatoes, turmeric powder, garam masala, red chili powder (if using), and salt. Cook for a few minutes until the tomatoes become soft and the spices are well combined.
Add the diced carrots, chopped green beans, and green peas to the pot. Stir and cook for 2-3 minutes.
Add the soaked and drained rice-lentil mixture to the pot. Mix well with the vegetables and spices.
Add 4 cups of water to the pot and close the lid of the pressure cooker or pot. Cook for about 4-5 whistles in the pressure cooker or simmer on low heat for 25-30 minutes in a pot until the rice and lentils are cooked and mushy.
Once cooked, let the pressure release naturally if using a pressure cooker. If using a pot, fluff the khichdi with a fork.
Garnish with fresh cilantro.

Add the grated cucumber, cumin powder, and salt. Mix well.
