Vegetable Kheer is a unique twist on the traditional Indian dessert made with grated carrots, beetroot, and bottle gourd. It is a delicious and nutritious sweet dish that combines the natural sweetness of vegetables with the richness of milk and aromatic spices like cardamom. The kheer is flavored with saffron and garnished with chopped nuts, making it a visually appealing and satisfying dessert

INGREDIENTS

  • 1/2 cup grated carrots
  • 1/4 cup grated beetroot
  • 1/4 cup grated bottle gourd (lauki)
  • 4 cups milk
  • 1/4 cup rice
  • 1/4 cup sugar (adjust according to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
  • 1 tablespoon ghee (clarified butter)
  • A few strands of saffron for garnishing (optional)

INSTRUCTIONS

  1. Heat ghee in a pan and add the grated carrots, beetroot, and bottle gourd. Sauté them on medium heat for a few minutes until they are slightly cooked.
  2. Rinse the rice and add it to the pan. Stir and cook for another minute.
  3. Add milk to the pan and bring it to a boil. Reduce the heat to low and let it simmer, stirring occasionally.
  4. Cook the mixture until the rice and vegetables are fully cooked and the milk has thickened, for about 30-40 minutes.
  5. Add sugar, cardamom powder, and saffron strands (if using). Mix well and simmer for another 5 minutes.
  6. Remove the pan from heat and allow it to cool for a few minutes.
  7. Garnish with chopped nuts and saffron strands.
  8. Serve the Vegetable Kheer warm or chilled as per your preference.

TIPS

  • Use fresh and tender vegetables for the best flavor and texture.
  • Adjust the quantity of sugar according to your taste preference. You can add more or less sugar based on your desired sweetness level.
  • You can add a few drops of rose water or kewra water for additional flavor.
  • If you prefer a smoother texture, you can blend the cooked mixture in a blender or use an immersion blender to puree it before adding sugar and spices.
  • Serve the Vegetable Kheer warm or chilled, according to your preference.
  • Leftover kheer can be stored in the refrigerator for 2-3 days.
