Vegan Tofu Teriyaki is a delicious and satisfying dish that features crispy tofu cubes and a medley of stir-fried vegetables in a flavorful teriyaki sauce. This vegan version of a classic Japanese dish is both savory and slightly sweet, making it a delightful addition to your plant-based recipe collection.

INGREDIENTS

For the Teriyaki Sauce:

  • 1/2 cup soy sauce or tamari (for a gluten-free option)
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup or agave nectar
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon cornstarch or arrowroot powder (for thickening)

For the Tofu and Vegetables:

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups mixed vegetables (e.g., broccoli, bell peppers, snap peas), chopped
  • 1 tablespoon vegetable oil
  • Sesame seeds and chopped green onions, for garnish (optional)
  • Cooked rice or noodles, for serving

INSTRUCTIONS

Prepare the Teriyaki Sauce:

  1. In a small bowl, whisk together the soy sauce or tamari, water, rice vinegar, maple syrup or agave nectar, minced garlic, and grated ginger.

  2. In a separate small bowl, mix the cornstarch or arrowroot powder with a tablespoon of water to create a slurry.

  3. Pour the slurry into the sauce mixture and whisk until well combined. Set the sauce aside.

Cook the Tofu and Vegetables:

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.

  2. Add the cubed tofu and cook for about 5-7 minutes, or until it becomes golden brown on all sides. Remove the tofu from the skillet and set it aside.

  3. In the same skillet, add the chopped mixed vegetables. Stir-fry for about 5-7 minutes until they become tender-crisp.

Combine the Tofu and Sauce:

  1. Return the cooked tofu to the skillet with the vegetables.

  2. Pour the prepared teriyaki sauce over the tofu and vegetables.

  3. Stir everything together and let it simmer for 2-3 minutes until the sauce thickens and coats the tofu and vegetables.

Serve Vegan Tofu Teriyaki:

  1. Garnish with sesame seeds and chopped green onions if desired.

  2. Serve hot over cooked rice or noodles.

TIPS

  • Adjust the sweetness of the teriyaki sauce by adding more or less maple syrup or agave nectar.
  • Feel free to use your favorite vegetables in the stir-fry.
  • For extra flavor, marinate the tofu cubes in a bit of the teriyaki sauce before cooking.
  • Serve over steamed jasmine rice, brown rice, or udon noodles for a complete meal.
  • Store any leftover tofu teriyaki in an airtight container in the refrigerator for up to two days.
