INGREDIENTS
For the Teriyaki Sauce:

- 2 tablespoons rice vinegar

- 1-inch piece of ginger, grated

- 1 block (14 oz) extra-firm tofu, pressed and cubed

- 1 tablespoon vegetable oil
- Sesame seeds and chopped green onions, for garnish (optional)
- Cooked rice or noodles, for serving
INSTRUCTIONS
Prepare the Teriyaki Sauce:
In a small bowl, whisk together the soy sauce or tamari, water, rice vinegar, maple syrup or agave nectar, minced garlic, and grated ginger.
In a separate small bowl, mix the cornstarch or arrowroot powder with a tablespoon of water to create a slurry.
Pour the slurry into the sauce mixture and whisk until well combined. Set the sauce aside.
Cook the Tofu and Vegetables:
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the cubed tofu and cook for about 5-7 minutes, or until it becomes golden brown on all sides. Remove the tofu from the skillet and set it aside.
In the same skillet, add the chopped mixed vegetables. Stir-fry for about 5-7 minutes until they become tender-crisp.
Combine the Tofu and Sauce:
Return the cooked tofu to the skillet with the vegetables.
Pour the prepared teriyaki sauce over the tofu and vegetables.
Stir everything together and let it simmer for 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
