
Vegan Tofu Tacos
The tofu filling is infused with taco seasoning, giving it a savory and spicy kick. Sautéed onions, bell peppers, corn, and black beans add a colorful and textural dimension to the tacos. You can customize your vegan tofu tacos with a variety of toppings, such as guacamole, salsa, vegan sour cream, lettuce, tomatoes, cilantro, or any of your favorite taco fixings.
INGREDIENTS
For the Tofu Filling:
- 1 block (14 oz) extra-firm tofu, pressed and crumbled
- 2 tablespoons taco seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, drained and rinsed
- Salt and black pepper to taste
For Serving:
- 8 small soft taco shells or tortillas (corn or flour)
- Guacamole, salsa, vegan sour cream, shredded lettuce, diced tomatoes, chopped cilantro, or any of your favorite taco toppings
INSTRUCTIONS
Prepare the Tofu Filling:
In a bowl, crumble the pressed tofu into small, bite-sized pieces.
Mix the crumbled tofu with the taco seasoning until it’s well coated. Set aside.
In a large skillet, heat the olive oil over medium-high heat.
Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
Stir in the minced garlic and sauté for another 1-2 minutes until fragrant.
Add the diced bell pepper and corn kernels to the skillet. Sauté for about 5 minutes until the vegetables start to soften.
Add the crumbled and seasoned tofu to the skillet. Cook for another 5-7 minutes, allowing the tofu to brown and crisp up slightly.
Stir in the drained black beans and cook for an additional 2-3 minutes until heated through.
Season with salt and black pepper to taste. Adjust the taco seasoning if needed.
Assemble Vegan Tofu Tacos:
Warm the soft taco shells or tortillas according to the package instructions.
Spoon the tofu and vegetable filling into each taco shell.
Top with your favorite taco toppings such as guacamole, salsa, vegan sour cream, shredded lettuce, diced tomatoes, and chopped cilantro.
Serve your vegan tofu tacos hot and enjoy!
TIPS
- Feel free to customize your tacos with additional toppings like vegan cheese, pickled jalapeños, or sliced olives.
