Vegan Tofu Scramble is a tasty and nutritious plant-based alternative to scrambled eggs. This savory dish combines crumbled tofu with an array of vegetables and spices for a satisfying breakfast or brunch option.

INGREDIENTS

  • 1 block (14 oz) extra-firm tofu, drained and pressed
  • 2 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/2 cup spinach or kale, chopped
  • 1/2 teaspoon turmeric powder (for color)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Optional toppings: sliced green onions, chopped cilantro, nutritional yeast, avocado slices, hot sauce
  • Toast, tortillas, or crusty bread for serving

INSTRUCTIONS

Preparing the Tofu:

  1. Drain the tofu and wrap it in a clean kitchen towel or paper towels.
  2. Place something heavy on top (like a cast-iron skillet) to press out excess moisture. Leave it for about 20-30 minutes.
  3. Once pressed, crumble the tofu with your hands to resemble scrambled eggs. Set aside.

Making the Tofu Scramble:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the finely chopped onion and diced bell pepper. Sauté for 3-4 minutes until they begin to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the crumbled tofu to the skillet and stir well to combine with the vegetables.
  5. Season with turmeric powder (for color), cumin powder, paprika, salt, and black pepper. Mix thoroughly.
  6. Add the diced tomatoes and chopped spinach or kale. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are tender and the tofu has absorbed the flavors.

Serve hot with your choice of toppings and sides.
