Vegan Tofu and Sesame Noodles are a delightful combination of crispy marinated tofu and tender noodles, all tossed in a savory sesame sauce. This dish is bursting with flavor and texture, making it a satisfying and wholesome vegan meal.

INGREDIENTS

For the Tofu:

  • 14 ounces (400g) extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or agave nectar
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon vegetable oil (for frying)

For the Sesame Noodles:

  • 8 ounces (about 225g) whole wheat or rice noodles (or any noodles of your choice)
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 green onions, thinly sliced
  • Sesame seeds and fresh cilantro leaves for garnish (optional)

INSTRUCTIONS

. Prepare the Tofu:

  • In a bowl, whisk together the soy sauce or tamari, sesame oil, maple syrup or agave nectar, minced garlic, minced ginger, and red pepper flakes.

  • Place the cubed tofu in a shallow dish and pour the marinade over it. Gently toss to coat the tofu cubes. Allow them to marinate for at least 15 minutes.

  • Heat a tablespoon of vegetable oil in a skillet or frying pan over medium-high heat. Add the marinated tofu cubes and cook until they are golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the pan and set it aside.

2. Cook the Noodles:

  • Cook the noodles according to the package instructions until they are al dente. Drain and rinse them under cold water to stop the cooking process. Set them aside.

3. Prepare the Sesame Sauce:

  • In a bowl, whisk together the sesame oil, soy sauce or tamari, rice vinegar, maple syrup or agave nectar, minced garlic, minced ginger, and red pepper flakes.

4. Combine Noodles and Sauce:

  • In a large mixing bowl, combine the cooked and cooled noodles with the sesame sauce. Toss to ensure the noodles are evenly coated with the sauce.

5. Assemble the Dish:

  • To serve, divide the sesame noodles among serving plates or bowls. Top them with the crispy tofu cubes.

  • Garnish with thinly sliced green onions, sesame seeds, and fresh cilantro leaves if desired.

TIPS

  • Adjust the red pepper flakes to your preferred level of spiciness. Omit them if you prefer a milder dish.
