
Vegan Tofu and Cilantro Lime Rice
The tofu is marinated in a mixture of soy sauce or tamari, olive oil, lime juice, minced garlic, ground cumin, and chili powder, creating a balance of savory and tangy flavors. Once pan-fried, the tofu turns golden brown and crunchy on the outside while staying tender on the inside.
INGREDIENTS
For the Tofu:
- 14 ounces (400g) extra-firm tofu, pressed and cubed
- 2 tablespoons soy sauce or tamari (for a gluten-free option)
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
For the Cilantro Lime Rice:
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon olive oil
- Zest and juice of 2 limes
- 1/2 cup fresh cilantro, chopped
- Salt to taste
Additional Ingredients:
- Sliced avocado for serving (optional)
- Lime wedges for garnish
- Salsa or hot sauce for extra flavor (optional)
INSTRUCTIONS
Prepare the Tofu:
In a bowl, whisk together the soy sauce or tamari, olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper.
Place the cubed tofu in a shallow dish and pour the marinade over it. Gently toss to coat the tofu cubes. Allow them to marinate for at least 15 minutes.
Heat a non-stick skillet or frying pan over medium-high heat. Add the marinated tofu cubes and cook until they are golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the pan and set it aside.
2. Make the Cilantro Lime Rice:
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, heat the olive oil over medium heat. Add the rinsed rice and cook for about 2-3 minutes, stirring occasionally, until the rice becomes slightly translucent.
Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and has absorbed the liquid.
Remove the rice from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
Stir in the lime zest, lime juice, chopped cilantro, and salt to taste.
3. Assemble the Dish:
To serve, place a portion of cilantro lime rice on each plate or bowl. Top with the crispy tofu cubes.
Garnish with sliced avocado, lime wedges, and salsa or hot sauce if desired.
