The tofu is marinated in a mixture of soy sauce or tamari, olive oil, lime juice, minced garlic, ground cumin, and chili powder, creating a balance of savory and tangy flavors. Once pan-fried, the tofu turns golden brown and crunchy on the outside while staying tender on the inside.

INGREDIENTS

For the Tofu:

  • 14 ounces (400g) extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste

For the Cilantro Lime Rice:

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • Zest and juice of 2 limes
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste

Additional Ingredients:

  • Sliced avocado for serving (optional)
  • Lime wedges for garnish
  • Salsa or hot sauce for extra flavor (optional)

INSTRUCTIONS

Prepare the Tofu:

  • In a bowl, whisk together the soy sauce or tamari, olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper.

  • Place the cubed tofu in a shallow dish and pour the marinade over it. Gently toss to coat the tofu cubes. Allow them to marinate for at least 15 minutes.

  • Heat a non-stick skillet or frying pan over medium-high heat. Add the marinated tofu cubes and cook until they are golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the pan and set it aside.

2. Make the Cilantro Lime Rice:

  • Rinse the rice under cold water until the water runs clear.

  • In a medium saucepan, heat the olive oil over medium heat. Add the rinsed rice and cook for about 2-3 minutes, stirring occasionally, until the rice becomes slightly translucent.

  • Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and has absorbed the liquid.

  • Remove the rice from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.

  • Stir in the lime zest, lime juice, chopped cilantro, and salt to taste.

3. Assemble the Dish:

  • To serve, place a portion of cilantro lime rice on each plate or bowl. Top with the crispy tofu cubes.

  • Garnish with sliced avocado, lime wedges, and salsa or hot sauce if desired.
