Vegan Stuffed Mini Eggplants are a flavorful and satisfying dish that showcases the versatility of eggplants. INSTRUCTIONS
- Preheat your oven to 375°F (190°C).
- Cut the mini eggplants in half lengthwise.
- Using a spoon, carefully scoop out the flesh from the center of each eggplant half, leaving a well for the stuffing.
- Chop the scooped-out eggplant flesh and set it aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion, bell pepper, minced garlic, and the chopped eggplant flesh. Sauté until the vegetables are softened.
- Add cooked quinoa, diced tomatoes, fresh parsley, ground cumin, smoked paprika, salt, and pepper to the skillet. Mix well and cook for a few more minutes.
- Stuff each eggplant half with the quinoa and vegetable mixture.
- Place the stuffed mini eggplants in a baking dish.
- Bake in the preheated oven for about 25-30 minutes or until the eggplants are tender.
- Once done, remove the stuffed mini eggplants from the oven.
- Garnish with crumbled vegan feta cheese (if using) and fresh mint leaves.
- Serve warm and enjoy!
