INGREDIENTS
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 4 cups fresh spinach leaves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro leaves, chopped, for garnish (optional)
- Lemon wedges, for serving
INSTRUCTIONS
Prepare the Potatoes:
- Place the cubed potatoes in a microwave-safe bowl and microwave on high for 2-3 minutes to partially cook them. This will help reduce the stir-fry cooking time.
Sauté the Potatoes:
In a large skillet or wok, heat the vegetable oil over medium heat.
Add the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.
Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
Add the partially cooked cubed potatoes to the skillet. Stir to combine with the onion mixture.
Season the potatoes with ground cumin, ground coriander, ground turmeric, paprika, cayenne pepper, salt, and black pepper. Mix well to coat the potatoes evenly with the spices.
Cook the potatoes, stirring occasionally, for about 10-15 minutes or until they are tender and slightly crispy on the outside.
Add the Spinach:
Add the fresh spinach leaves to the skillet. Stir to combine with the cooked potatoes and allow the spinach to wilt.
Continue cooking for an additional 2-3 minutes until the spinach is wilted and incorporated into the dish.
Serve the Vegan Spinach and Potato Stir-Fry:
Transfer the stir-fry to a serving dish.
Garnish with fresh cilantro leaves if desired and serve hot.
Serve with lemon wedges on the side for a touch of acidity.
