INGREDIENTS

  • 1 cup green or brown lentils, rinsed and drained
  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), diced
  • 1 zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

INSTRUCTIONS

Prepare the Lentils:

  • Rinse the lentils under cold water and drain them.

2. Sauté the Aromatics:

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables begin to soften.

  • Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

3. Add the Vegetables and Spices:

  • Add the diced bell pepper and zucchini to the pot. Sauté for another 2-3 minutes.

  • Stir in the can of diced tomatoes (with their juice), dried thyme, dried rosemary, bay leaf, salt, and black pepper. Mix well.

4. Simmer the Stew:

  • Pour in the vegetable broth and rinsed lentils. Stir everything together.

  • Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 25-30 minutes, or until the lentils are tender and the vegetables are cooked.

5. Adjust Seasoning:

  • Taste the stew and adjust the seasoning with more salt and black pepper if needed.

6. Serve:

  • Remove the bay leaf from the stew before serving.
