Vegan Cucumber Yogurt, also known as Cucumber Raita, is a cooling and refreshing side dish commonly served in Indian cuisine. This dairy-free version of the classic raita uses plant-based yogurt, making it suitable for vegans and those with lactose intolerance.

INGREDIENTS

  • 1 large cucumber, peeled and grated
  • 1 1/2 cups dairy-free yogurt (such as almond, soy, or coconut yogurt)
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 1-2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander (optional)
  • Salt to taste
  • Black pepper to taste
  • 1-2 tablespoons lemon juice (adjust to taste)
  • 1-2 tablespoons olive oil (optional, for extra creaminess)
  • Pinch of cayenne pepper (optional, for heat)

INSTRUCTIONS

  1. Grate the peeled cucumber using a box grater or a food processor with a grating attachment. Place the grated cucumber in a fine-mesh strainer or a clean kitchen towel, and squeeze out excess moisture. Set aside.

  2. In a mixing bowl, combine the dairy-free yogurt, finely chopped mint leaves, finely chopped cilantro leaves, minced garlic, ground cumin, ground coriander (if using), salt, black pepper, and lemon juice.

  3. Add the grated and drained cucumber to the yogurt mixture. Stir to combine all the ingredients thoroughly.

  4. If you want extra creaminess, you can drizzle in a bit of olive oil and mix it into the cucumber yogurt.

  5. Taste the cucumber yogurt and adjust the seasoning by adding more salt, black pepper, or lemon juice if needed. If you prefer some heat, you can add a pinch of cayenne pepper.

  6. Refrigerate the vegan cucumber yogurt for at least 30 minutes before serving to allow the flavors to meld together.

  7. Serve as a refreshing side dish with Indian curries, biryanis, grilled vegetables, or as a dip for flatbreads and pita chips.

TIPS

  • Use unsweetened and unflavored dairy-free yogurt for the best results. You can find almond, soy, or coconut yogurt at most grocery stores.
  • Adjust the amount of lemon juice to your taste. You can make the cucumber yogurt tangier by adding more lemon juice.
  • If you prefer a milder garlic flavor, you can reduce the amount of minced garlic or omit it altogether.
