VEGAN BANANA BREAD RECIPE

5/5

Vegan Banana Bread can be a tasty and satisfying treat as part of your Indian weight loss journey, provided it is consumed in moderation and as part of a balanced diet.

INGREDIENTS

  • 2 ripe bananas, mashed
  • 1/3 cup melted coconut oil or vegetable oil
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 cup plant-based milk (such as almond milk or soy milk)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional add-ins: chopped nuts, chocolate chips, dried fruits

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  2. In a large mixing bowl, combine the mashed bananas, melted coconut oil (or vegetable oil), coconut sugar (or brown sugar), plant-based milk, and vanilla extract. Stir until well combined.

  3. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

  5. If desired, fold in any optional add-ins, such as chopped nuts, chocolate chips, or dried fruits.

  6. Pour the batter into the prepared loaf pan, spreading it evenly.

  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

  9. Slice and serve the Vegan Banana Bread as desired.

TIPS

  1. Use ripe bananas: Choose ripe bananas with brown spots for the best flavor and natural sweetness. The riper the bananas, the sweeter the bread will be.

  2. Adjust sweetness: Feel free to adjust the amount of sugar or sweetener to suit your taste preferences. If the bananas are already very ripe, you may be able to reduce the amount of sugar.

  3. Add healthy add-ins: Enhance the nutritional value of your banana bread by adding chopped nuts, such as walnuts or almonds, or dark chocolate chips. These add-ins provide additional texture, flavor, and nutrients.

  4. Opt for whole wheat flour: For added fiber and nutrients, consider using whole wheat flour instead of all-purpose flour. This will make the bread more filling and nutritious.

  5. Store properly: To maintain freshness, store the banana bread in an airtight container at room temperature for up to 3-4 days. You can also freeze individual slices for longer storage.

  6. Enjoy in moderation: While vegan banana bread can be a healthier alternative to traditional banana bread, it’s still important to consume it in moderation as part of a balanced diet.
