Vegan Aloo Gobi, a classic Indian dish, is a comforting and flavorful potato and cauliflower curry. In this vegan version, tender potato cubes and cauliflower florets are simmered in a rich and aromatic tomato-based sauce infused with a blend of spices.

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • 2 medium potatoes, peeled and diced
  • 1 small cauliflower, cut into florets
  • 2 tomatoes, chopped
  • 1 cup water or vegetable broth
  • Salt to taste
  • Fresh cilantro leaves, chopped, for garnish (optional)

INSTRUCTIONS

Sauté the Aromatics:

  1. In a large skillet or wide saucepan, heat the vegetable oil over medium heat.

  2. Add the cumin seeds and sauté for a minute or until they start to sizzle.

  3. Stir in the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.

  4. Add the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.

Add the Spices:

  1. Stir in the ground coriander, ground cumin, ground turmeric, paprika, and cayenne pepper. Cook for a minute to toast the spices.

Cook the Potatoes and Cauliflower:

  1. Add the diced potatoes and cauliflower florets to the skillet. Stir well to coat them with the spices.

  2. Pour in the chopped tomatoes and cook for 2-3 minutes until they start to soften.

  3. Add water or vegetable broth to the skillet. Cover and simmer for about 15-20 minutes, or until the potatoes and cauliflower are tender.

Finish the Aloo Gobi:

  1. Season with salt to taste and adjust the seasonings as needed.

  2. Simmer for an additional 5 minutes to allow the flavors to meld together.

Serve Vegan Aloo Gobi:

  1. Garnish with chopped fresh cilantro leaves if desired.

  2. Serve hot as a delicious and comforting vegan aloo gobi curry, either with rice or naan bread.
