INGREDIENTS
- 2 ripe avocados
- 1 can of tuna (in water or oil), drained
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup diced cucumber
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
INSTRUCTIONS
Cut the avocados in half lengthwise and remove the pits. Scoop out some of the flesh from each avocado half, creating a hollow space for the tuna filling. Reserve the scooped-out avocado flesh for later use or enjoy it on the side.
In a bowl, combine the drained tuna, diced red onion, diced celery, diced cucumber, mayonnaise, and lemon juice. Mix well to combine all the ingredients. Season with salt and pepper to taste.
Spoon the tuna mixture into each hollowed-out avocado half, filling them generously.
Garnish the stuffed avocados with fresh parsley or cilantro, if desired.
Serve the Tuna Stuffed Avocado as a light lunch or appetizer. It can be enjoyed on its own or paired with a side salad or whole grain crackers.
