Tomato Uttapam is a savory South Indian pancake made with fermented rice and lentil batter, topped with chopped tomatoes and spices. It is a popular breakfast or snack option that is both delicious and filling.

To make Tomato Uttapam, start by preparing the batter by fermenting a mixture of rice and lentils overnight or for a few hours. The fermented batter is then spread on a hot griddle or tawa to form a thick pancake-like base.

Chopped tomatoes, along with other toppings like onions, green chilies, and cilantro, are sprinkled over the batter. The uttapam is cooked until golden brown and crispy on the bottom, and then flipped to cook the other side.

Once both sides are cooked, the Tomato Uttapam is ready to be served hot. It is commonly enjoyed with coconut chutney, sambar, or tomato chutney.

Tomato Uttapam is a flavorful and wholesome dish that combines the tanginess of tomatoes with the softness of the fermented batter. It can be customized with various toppings and spices according to personal preference.

INGREDIENTS

  • 2 cups dosa or idli batter (fermented rice and lentil batter)
  • 2 medium-sized tomatoes, finely chopped
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (adjust to taste)
  • A few sprigs of fresh coriander leaves, chopped
  • Salt to taste
  • Oil or ghee for cooking

INSTRUCTIONS

  1. Heat a tawa or griddle over medium heat and grease it with a little oil or ghee.
  2. Take a ladleful of dosa or idli batter and pour it onto the center of the heated tawa. Using the back of the ladle, spread the batter in a circular motion to form a thick pancake-like base.
  3. Sprinkle the chopped tomatoes, onions, green chilies, and coriander leaves evenly over the batter.
  4. Drizzle a little oil or ghee around the edges and on top of the uttapam.
  5. Cover the tawa with a lid and cook the uttapam on medium heat until the bottom turns golden brown and crispy.
  6. Flip the uttapam and cook the other side until it is cooked through.
  7. Once both sides are cooked, transfer the Tomato Uttapam to a serving plate.
  8. Repeat the process with the remaining batter and toppings to make more uttapams.
  9. Serve the Tomato Uttapam hot with coconut chutney, sambar, or tomato chutney.
