INGREDIENTS

  • 1 block of firm tofu
  • 2 tablespoons of olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon of turmeric powder
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish, optional)

INSTRUCTIONS

  1. Drain and press the tofu to remove excess moisture. Crumble the tofu into small pieces using your hands or a fork.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the diced onion and bell pepper to the skillet and sauté until they become tender.
  4. Add the minced garlic to the skillet and cook for another minute until fragrant.
  5. Add the crumbled tofu to the skillet and stir well to combine with the vegetables.
  6. Sprinkle nutritional yeast, turmeric powder, cumin powder, paprika, salt, and pepper over the tofu mixture. Stir well to evenly coat the ingredients.
  7. Cook the tofu scramble for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
