INSTRUCTIONS
- Cook the brown rice according to the package instructions. Once cooked, set it aside.
- Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set it aside.
- In the same skillet, add another tablespoon of oil. Add the sliced onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
- Add the bell pepper, carrot, and broccoli to the skillet. Stir fry for about 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, hoisin sauce, and rice vinegar. Pour the sauce over the vegetables in the skillet and toss to coat evenly.
- Return the tofu to the skillet and stir fry for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste.
- Serve the tofu and vegetable stir fry over the cooked brown rice. Garnish with fresh cilantro.
