Tofu and Vegetable Stir-Fry

The tofu is marinated to infuse flavor, and the vegetables are stir-fried to maintain their crunch and freshness. INGREDIENTS
For Tofu Marinade:
- 1 block firm tofu, pressed and cut into cubes
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
For Stir-Fry Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey or maple syrup (optional)
- 1 teaspoon cornstarch
For Stir-Fry:
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.), sliced or chopped
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons vegetable oil
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
- Cooked rice or noodles for serving
INSTRUCTIONS
Tofu Marinade:
In a bowl, whisk together soy sauce, hoisin sauce, sesame oil, and cornstarch to create the marinade.
Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for about 15-20 minutes.
Stir-Fry Sauce:
- In another bowl, mix together soy sauce, hoisin sauce, rice vinegar, sesame oil, honey or maple syrup (if using), and cornstarch to create the stir-fry sauce.
Stir-Fry:
Heat vegetable oil in a wok or large skillet over high heat.
Add sliced onion and sauté until it turns translucent.
Stir in minced garlic and ginger and sauté for another minute until fragrant.
Add the mixed vegetables to the wok and stir-fry for about 3-5 minutes, or until they start to soften but remain crisp.
Push the vegetables to the side of the wok and add the marinated tofu cubes to the center. Cook the tofu for about 2-3 minutes on each side until they are browned and slightly crispy.
Pour the stir-fry sauce over the tofu and vegetables. Toss everything together to coat in the sauce. Cook for an additional 1-2 minutes until the sauce thickens.
Assembling the Dish:
Serve the Tofu and Vegetable Stir-Fry over cooked rice or noodles on plates.
Garnish with chopped green onions and sesame seeds.

Feel free to add other vegetables or ingredients like mushrooms, baby corn, or water chestnuts.
Adjust the level of sweetness by varying the amount of honey or maple syrup in the stir-fry sauce.
