Tofu and Vegetable Kebabs are a delicious and colorful addition to your barbecue or grill menu. These vegan kebabs feature marinated tofu cubes and a variety of fresh vegetables, all threaded onto skewers and grilled to perfection. The tofu soaks up the flavors of the marinade, resulting in a dish that’s both savory and satisfying.

INGREDIENTS

For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and black pepper to taste

For the Kebabs:

  • 1 block (14 oz) extra-firm tofu, pressed and cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 zucchini, sliced into rounds
  • 8-10 cherry tomatoes
  • Wooden skewers, soaked in water for 30 minutes to prevent burning

INSTRUCTIONS

Prepare the Marinade:

  1. In a mixing bowl, combine the olive oil, soy sauce or tamari, minced garlic, ground cumin, paprika, ground coriander, dried oregano, cayenne pepper, salt, and black pepper. Whisk until the marinade is well mixed.

Marinate the Tofu:

  1. Place the cubed tofu in a shallow dish or a resealable plastic bag.

  2. Pour the marinade over the tofu and gently toss to coat the tofu cubes evenly.

  3. Cover the dish or seal the bag and refrigerate for at least 30 minutes, allowing the tofu to absorb the flavors.

Assemble the Kebabs:

  1. Preheat your grill or grill pan to medium-high heat.

  2. Thread the marinated tofu cubes, red and yellow bell pepper pieces, red onion pieces, zucchini rounds, and cherry tomatoes onto the soaked wooden skewers, alternating the ingredients to create colorful and flavorful kebabs.

Grill the Kebabs:

  1. Place the tofu and vegetable kebabs on the preheated grill.

  2. Grill for about 8-10 minutes, turning occasionally, or until the tofu and vegetables are charred and cooked to your desired level of doneness.

Serve Tofu and Vegetable Kebabs:

  1. Remove the kebabs from the grill and let them cool slightly.

  2. Serve the tofu and vegetable kebabs hot with your favorite dipping sauce, rice, or a fresh salad.

TIPS

  • If you’re using wooden skewers, remember to soak them in water for at least 30 minutes before assembling the kebabs. This prevents the skewers from burning on the grill.
  • Customize your kebabs by adding your favorite vegetables like mushrooms, eggplant, or cherry tomatoes.
  • Serve the kebabs with a side of tzatziki sauce, hummus, or a drizzle of balsamic glaze for extra flavor.
