Tofu and Mushroom Stir-Fry
Tofu and Mushroom Stir-Fry is a quick and versatile dish that combines protein-rich tofu with earthy mushrooms and a savory-sweet sauce. INGREDIENTS
- 14 oz (400g) firm tofu, drained and cubed
- 8 oz (225g) mushrooms (such as button or cremini), sliced
- 1 red bell pepper, sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch (optional, for thickening)
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
- Cooked rice or noodles (for serving)
INSTRUCTIONS
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
Heat vegetable oil in a large pan or wok over medium-high heat.
Add cubed tofu to the pan and cook until it’s golden and slightly crispy on the edges. Remove the tofu from the pan and set aside.
In the same pan, add a bit more oil if needed. Add sliced mushrooms and cook until they release their moisture and start to brown. Remove the mushrooms from the pan and set aside.
Add sliced red bell pepper and onion to the pan. Sauté for a few minutes until they are slightly softened.
Push the vegetables to the side of the pan and add minced garlic and grated ginger to the cleared space. Sauté for about 30 seconds until fragrant.
Add the cooked tofu and mushrooms back to the pan.
Pour the prepared sauce over the tofu and vegetables. Stir to coat everything evenly.
If you’d like a thicker sauce, mix cornstarch with a little water to create a slurry. Stir the slurry into the stir-fry and cook until the sauce thickens.
Remove the pan from the heat.
Serve:
Serve the Tofu and Mushroom Stir-Fry over cooked rice or noodles.
Garnish with chopped green onions and sesame seeds
TIPS
Marinate the tofu before cooking it for added flavor. You can use a mixture of soy sauce, ginger, garlic, and a touch of sesame oil.
Feel free to add other vegetables like broccoli, snow peas, or baby corn.
Adjust the sauce ingredients to suit your taste preferences. You can add a touch of chili sauce for heat or more hoisin sauce for sweetness.
