Tofu and Asparagus Stir-Fry is a protein-packed and vegetable-forward dish that brings together the tender crunch of asparagus with the satisfying texture of tofu. The combination of soy sauce, hoisin sauce, and aromatics creates a savory and umami-rich flavor profile that elevates the dish. This stir-fry is both easy to prepare and versatile, making it a great option for a quick weeknight dinner.

INGREDIENTS

  • 1 block (14 oz) firm tofu, drained and cubed
  • 1 bunch asparagus, tough ends trimmed and spears cut into bite-sized pieces
  • 2 tablespoons vegetable oil (such as sesame oil or canola oil)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1/2 teaspoon sesame seeds (optional, for garnish)
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

INSTRUCTIONS

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

  2. Add the cubed tofu to the skillet and sauté for about 5-7 minutes, or until the tofu is golden brown and slightly crispy. Remove the tofu from the skillet and set aside.

  3. In the same skillet, add the remaining tablespoon of oil.

  4. Add the minced garlic and grated ginger to the hot oil. Sauté for about 30 seconds until fragrant.

  5. Add the asparagus spears to the skillet. Stir-fry for about 4-5 minutes, or until the asparagus is bright green and slightly tender.

  6. In a small bowl, whisk together the soy sauce, hoisin sauce, and cornstarch (if using).

  7. Push the asparagus to the sides of the skillet and pour the sauce mixture into the center. Allow it to bubble and thicken for a minute.

  8. Add the cooked tofu back to the skillet and toss everything together to coat the tofu and asparagus with the sauce.

  9. Season with salt, pepper, and red pepper flakes (if using) to taste.

  10. If desired, sprinkle sesame seeds over the stir-fry for a nutty garnish.

Serve:
