INGREDIENTS

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) coconut milk
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small onion, sliced
  • 1 cup broccoli florets
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro leaves (for garnish)
  • Cooked rice or noodles (for serving)

INSTRUCTIONS

  1. In a large skillet or wok, heat some oil over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.

  2. Add the coconut milk to the skillet and stir well to combine with the curry paste. Bring the mixture to a simmer.

  3. Add the sliced bell peppers, zucchini, onion, and broccoli to the skillet. Cook for 3-4 minutes until the vegetables start to soften.
