INGREDIENTS

  • 1 pound salmon fillets, cut into bite-sized cubes
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons honey (or brown sugar for a sweeter glaze)
  • 2 tablespoons mirin (Japanese rice wine) or dry sherry
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

  • Sesame seeds
  • Sliced green onions
  • Red pepper flakes
  • Sliced scallions

INSTRUCTIONS

  1. In a bowl, prepare the teriyaki marinade by combining soy sauce, honey, mirin, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until the honey is dissolved, and the ingredients are well combined.

  2. Place the salmon cubes in a resealable plastic bag or a shallow dish. Pour the teriyaki marinade over the salmon, making sure all pieces are coated evenly. Seal the bag or cover the dish and let the salmon marinate in the refrigerator for at least 30 minutes, or ideally, 1-2 hours for more flavor.

  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning while cooking.
