Teriyaki Beef Stir-Fry

INGREDIENTS
- 1 pound beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons teriyaki sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium carrot, julienned
- 1 small broccoli crown, cut into florets
- 1/2 cup snap peas or snow peas
- Salt and black pepper, to taste
- Sesame seeds and sliced green onions, for garnish (optional)
- Cooked rice or noodles, for serving
INSTRUCTIONS
In a bowl, combine the soy sauce, teriyaki sauce, honey or brown sugar, rice vinegar, and cornstarch. Whisk until the cornstarch is fully dissolved and the sauce is smooth. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
Add the beef slices to the skillet and cook for 2-3 minutes until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the sliced bell peppers, julienned carrot, broccoli florets, and snap peas or snow peas. Stir-fry the vegetables for about 4-5 minutes until they are crisp-tender.
Return the cooked beef to the skillet with the vegetables. Pour the teriyaki sauce over the beef and vegetables, and toss everything together to coat evenly. Cook for an additional 2-3 minutes until the sauce has thickened and the beef is cooked through.
Season with salt and black pepper to taste. Adjust the sweetness or saltiness of the sauce by adding more honey, soy sauce, or teriyaki sauce if desired.
Remove the skillet from the heat and garnish the stir-fry with sesame seeds and sliced green onions, if desired.
