INGREDIENTS

  • 2 medium-sized sweet potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust according to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro leaves, chopped (for garnish)

INSTRUCTIONS

  1. Heat oil in a large pan or pot over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds until fragrant.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute until aromatic.
  5. Add the tomato puree and cook for a few minutes until the raw smell disappears.
  6. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  7. Add the diced sweet potatoes and stir to coat them with the spice mixture.
  8. Cover the pan and cook for about 15-20 minutes or until the sweet potatoes are tender, stirring occasionally.
  9. Once the sweet potatoes are cooked, sprinkle garam masala over the curry and mix well.
  10. Adjust salt and spices according to taste.
  11. Garnish with chopped cilantro leaves.
  12. Serve hot with steamed rice or roti.
