INGREDIENTS

  • 4 large tomatoes
  • 1 cup cottage cheese (paneer), crumbled
  • 1 small onion, finely chopped
  • 1/2 bell pepper (any color), finely chopped
  • 2-3 tablespoons fresh cilantro or parsley, chopped
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Olive oil, for drizzling

INSTRUCTIONS

  1. Slice off the tops of the tomatoes and carefully scoop out the insides to create hollow tomato shells. You can use a spoon to gently remove the seeds and flesh. Keep the hollowed-out tomatoes aside.

  2. In a mixing bowl, combine the crumbled cottage cheese (paneer), finely chopped onion, finely chopped bell pepper, chopped fresh cilantro or parsley, cumin powder, red chili powder, and salt. Mix well to combine all the ingredients.

  3. Stuff each hollowed tomato with the cottage cheese mixture, pressing it gently to pack it in.

  4. Place the stuffed tomatoes in a baking dish.

  5. Drizzle a little olive oil over the top of each stuffed tomato.

  6. Preheat your oven to 350°F (175°C).

  7. Place the baking dish with the stuffed tomatoes in the preheated oven. Bake for about 15-20 minutes, or until the tomatoes are softened and the stuffing is heated through.

  8. Once done, remove the baking dish from the oven and let the stuffed tomatoes cool slightly before serving.
