Stuffed Paneer Tikki Cottage Cheese Patties are a delightful Indian snack that combines the creaminess of paneer with the crispness of the outer covering. These patties are perfect for Indian weight loss diets as they are shallow-fried instead of deep-fried. Paneer, a rich source of protein, along with the flavors of onions and spices, adds a burst of taste to these patties. They can be enjoyed as an evening snack or as a part of a meal.

INGREDIENTS

For the stuffing:

  • 1 cup crumbled paneer (cottage cheese)
  • 1/4 cup finely chopped onions
  • 2 tablespoons finely chopped coriander leaves
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon chaat masala
  • Salt to taste

For the outer covering:

  • 2 cups boiled and mashed potatoes
  • 2 tablespoons corn flour
  • 1/2 teaspoon red chili powder
  • Salt to taste

For frying:

  • 2-3 tablespoons oil

INSTRUCTIONS

  1. In a mixing bowl, combine the crumbled paneer, chopped onions, coriander leaves, green chili (if using), chaat masala, and salt. Mix well to make the stuffing mixture.
  2. In another bowl, mix together the mashed potatoes, corn flour, red chili powder, and salt to make the outer covering mixture.
  3. Take a small portion of the potato mixture and flatten it in your palm. Place a spoonful of the paneer stuffing in the center. Bring the edges of the potato mixture together to enclose the stuffing and shape it into a patty. Repeat the process for the remaining mixture.
  4. Heat oil in a pan over medium heat. Place the stuffed patties in the pan and cook on each side until golden brown and crispy. This should take about 3-4 minutes per side.
  5. Once cooked, remove the patties from the pan and place them on a paper towel to absorb any excess oil.

  5. Heat oil in a pan over medium heat. Carefully place the stuffed patties in the pan and cook them on each side until they turn golden brown and crispy. This will take approximately 3-4 minutes per side. Adjust the heat if necessary to prevent burning.
  6. Once cooked, transfer the patties to a plate lined with a paper towel to absorb any excess oil.

TIPS

  1. Ensure the mashed potatoes are free from excess moisture to prevent the patties from becoming soggy. If needed, drain any excess water from the boiled potatoes before mashing.
  2. Adjust the spice levels according to your preference. You can increase or decrease the amount of green chili and red chili powder as per your taste.
  3. You can add additional ingredients like grated carrots, finely chopped bell peppers, or boiled peas to the stuffing mixture for added flavor and texture.
