INSTRUCTIONS
Stuffed Bell Peppers:
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes from the inside.
In a mixing bowl, combine the cottage cheese, cooked quinoa or rice, diced tomatoes, diced onion, diced zucchini, chopped herbs, garlic powder, onion powder, salt, and pepper. Mix well to combine.
Stuff the bell peppers with the cottage cheese and quinoa mixture, pressing it down gently as you fill each pepper.
