INGREDIENTS
- 1 cup yellow moong dal (split yellow lentils), rinsed and drained
- 4 cups water
- 2 cups fresh spinach leaves, washed and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 4 cups vegetable broth or water
- 2 tablespoons olive oil or ghee
- Juice of 1 lemon
- Fresh cilantro leaves for garnish
INSTRUCTIONS
In a pot, combine yellow moong dal and 4 cups of water. Bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the dal is tender and cooked through.
While the dal is cooking, heat olive oil or ghee in a separate pot over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add chopped onion, minced garlic, and minced ginger. Sauté until the onion turns translucent.
Stir in turmeric powder, ground coriander, and red chili powder. Cook for another minute to release the flavors.
Add the chopped spinach to the pot and cook until wilted.
Once the moong dal is cooked, add it to the pot with the sautéed spinach and spices. Mix everything together.
Pour in vegetable broth or water to achieve the desired soup consistency. If you prefer a thicker soup, add less liquid; for a thinner soup, add more.
Season the soup with salt to taste and let it simmer for an additional 10-15 minutes to allow the flavors to meld.
Just before serving, stir in the juice of one lemon to brighten the flavors.
Assembling the Dish:
Ladle the Spinach and Moong Dal Soup into serving bowls.
Garnish with fresh cilantro leaves for added freshness and aroma.
