5/5

Spinach and Feta Stuffed Portobello Mushrooms are a nutrient-rich and low-carb option for individuals following an Indian weight loss diet:

  • Portobello mushrooms provide a meaty texture and are low in calories.

  • Spinach adds vitamins, minerals, and dietary fiber.

  • Feta cheese contributes flavor and protein.

INGREDIENTS

  • 4 large Portobello mushrooms, stems removed
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).

  2. Clean the Portobello mushrooms by gently wiping them with a damp paper towel. Remove the stems and gently scrape out the gills using a spoon to create more space for the stuffing.

  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion and sauté for 2-3 minutes until softened.

  4. Add the minced garlic and chopped spinach to the skillet. Sauté for another 2-3 minutes until the spinach wilts.

  5. Remove the skillet from heat and stir in the crumbled feta cheese and dried oregano. Season with salt and pepper to taste.

  6. Brush the outside of the Portobello mushrooms with the remaining olive oil.

  7. Fill each mushroom cap with the spinach and feta mixture, pressing it down gently.

  8. Place the stuffed mushrooms on a baking sheet or in a baking dish.

  9. Bake in the preheated oven for about 15-20 minutes, or until the mushrooms are tender and the filling is heated through.

  10. Remove from the oven and let the mushrooms cool slightly before serving.

  11. Serve the Spinach and Feta Stuffed Portobello Mushrooms as a flavorful and satisfying appetizer or main dish.

TIPS

  1. Customize the stuffing by adding chopped sun-dried tomatoes or pine nuts for extra flavor and texture.

  2. Be mindful of portion sizes, especially if you’re aiming to lose weight.

  3. Enjoy the Stuffed Portobello Mushrooms with a side salad for a well-rounded meal.

  4. As always, consult with a nutritionist or healthcare professional for personalized advice and guidance on your weight loss journey, especially if you have specific dietary restrictions or health concerns.
