INGREDIENTS

  • 1 cup spinach leaves, blanched and chopped
  • 1 cup cottage cheese (paneer), grated
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons gram flour (besan)
  • 1 tablespoon corn flour
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for cooking

INSTRUCTIONS

  1. In a mixing bowl, combine the chopped spinach, grated cottage cheese, chopped onion, green chilies, gram flour, corn flour, ginger-garlic paste, cumin powder, garam masala, and salt. Mix well until all the ingredients are evenly combined.
  2. Shape the mixture into small kebabs or patties.
  3. Heat oil in a non-stick pan or griddle over medium heat.
  4. Place the kebabs on the pan and cook for about 3-4 minutes on each side, or until they turn golden brown and crispy.
  5. Remove the kebabs from the pan and drain them on a kitchen towel to remove any excess oil.
  6. Serve hot with mint chutney or any dipping sauce of your choice.

  1. Blanch the spinach leaves by placing them in boiling water for a few seconds, then transfer them to ice-cold water to retain their green color. Drain the excess water and chop the blanched spinach.
