INGREDIENTS
- 2 cups fresh spinach leaves, washed and dried
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Lemon wedges for serving
INSTRUCTIONS
Heat olive oil in a large skillet or pan over medium heat.
Add chopped onion and sauté until it becomes translucent.
Stir in minced garlic and cook for about 1-2 minutes until fragrant.
Add ground cumin, ground coriander, and red pepper flakes. Mix well to coat the onions with the spices.
Add the drained and rinsed chickpeas to the skillet. Stir-fry for a few minutes to allow the chickpeas to absorb the flavors.
Add the fresh spinach leaves to the skillet and sauté until they wilt and combine with the chickpeas.
Season the stir-fry with salt and pepper to taste.
Once the spinach is wilted and the ingredients are well combined, remove the skillet from the heat.
