INGREDIENTS
- 2 cups tindora (ivy gourd), washed, trimmed, and sliced

- 1 teaspoon cumin powder

INSTRUCTIONS
Prepare Tindora: Wash the tindora (ivy gourd) thoroughly. Trim the ends and slice them into thin rounds.
Tempering: In a large pan, heat oil over medium heat. Add mustard seeds and let them splutter. Add cumin seeds and sauté for a few seconds.
Sauté Onion: Add thinly sliced onions and sauté until they turn translucent and slightly caramelized.
Add Spices: Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the onions with the spices.
Cook Tindora: Add the sliced tindora to the pan. Mix well with the spiced onions.
Sauté and Fry: Cook the tindora on medium heat, stirring occasionally. Allow them to cook until they become tender and slightly crispy around the edges. This may take around 15-20 minutes.
Adjust Seasoning: Taste and adjust the seasoning and spiciness according to your preference.
