INGREDIENTS
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce (adjust to taste)
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
INSTRUCTIONS
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil.
Add the sliced onion, bell pepper, carrot, and broccoli florets to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
In a small bowl, whisk together the soy sauce, sriracha sauce, honey (or maple syrup), salt, and pepper.
Pour the sauce over the vegetables in the skillet and stir to coat them evenly.
Return the cooked shrimp to the skillet and toss everything together to combine.
Cook for another 2-3 minutes until the shrimp is heated through and the flavors are well incorporated.
Remove from heat and garnish with fresh cilantro, if desired.

- To make it a complete Indian meal, serve the stir fry with a side of cucumber raita and whole wheat chapatis.
