SPICY EGG MASALA RECIPE

INGREDIENTS
- 4 hard-boiled eggs, peeled and halved
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, finely chopped (for garnish)
INSTRUCTIONS
Heat oil in a pan or kadai over medium heat. Add the chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste to the pan and cook for a minute until fragrant.
Add the tomato puree and cook until the oil starts to separate from the masala.
Add the slit green chilies, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to combine all the spices.
Cook the masala for a few minutes until the spices are well blended and the raw smell disappears.
Add the halved hard-boiled eggs to the masala and gently coat them with the masala mixture. Be careful not to break the eggs.
Reduce the heat to low and let the eggs simmer in the masala for about 5 minutes, allowing them to absorb the flavors.
Sprinkle garam masala powder over the eggs and mix gently.
Remove from heat and garnish with fresh coriander leaves.

- Adjust the spiciness of the dish by adding or reducing the amount of red chili powder and green chilies.
