SPICY EGG CURRY WITH STEAMED BROCCOLI
Spicy Egg Curry with Steamed Broccoli is a delicious and nutritious Indian dish. INGREDIENTS
- 4 hard-boiled eggs
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste

- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon fenugreek seeds
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon fennel seeds
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon cardamom powder
- 1 cup coconut milk
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnishing
For the Steamed Broccoli:
- 2 cups broccoli florets
- Water for steaming
- Salt to taste
INSTRUCTIONS
Heat oil in a pan or skillet. Add cumin seeds, fenugreek seeds, mustard seeds, and fennel seeds. Let them crackle.
Add the chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and green chilies. Cook for 1-2 minutes until the raw smell disappears.
Add chopped tomatoes and cook until they become soft and mushy.
Add turmeric powder, red chili powder, coriander powder, garam masala powder, cinnamon powder, and cardamom powder. Mix well and cook for 2-3 minutes.
Pour in the coconut milk and simmer the curry for 5-7 minutes on low heat. Add salt to taste.
Peel the hard-boiled eggs and make a few slits on each egg using a knife.
Carefully add the eggs to the curry and gently stir to coat them with the sauce. Simmer for another 5 minutes to allow the flavors to infuse.
Meanwhile, steam the broccoli florets until they are tender-crisp. Sprinkle a little salt over the steamed broccoli.
Transfer the spicy egg curry to a serving dish. Garnish with fresh coriander leaves.
