Spiced Tofu and Bell Pepper Stir-Fry is a vibrant and flavorful dish that combines the protein-rich tofu with the colorful sweetness of bell peppers and aromatic spices. The blend of cumin, coriander, and turmeric infuses the dish with warmth and depth, creating a satisfying and wholesome stir-fry that’s both delicious and hearty.

INGREDIENTS

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 bell peppers (assorted colors), sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil (such as canola or peanut oil)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro or chopped green onions for garnish

INSTRUCTIONS

  1. Heat vegetable oil in a large skillet or pan over medium-high heat.

  2. Add thinly sliced onion and sauté until it becomes translucent.

  3. Stir in minced garlic and grated ginger, and cook for about 1-2 minutes until fragrant.

  4. Add cubed tofu to the skillet and stir-fry for about 5-6 minutes until the tofu starts to brown and becomes slightly crispy.

  5. Push the tofu to one side of the skillet and add the sliced bell peppers. Cook for about 3-4 minutes until the peppers are slightly softened but still vibrant.

  6. In a small bowl, whisk together soy sauce, ground cumin, ground coriander, turmeric, red pepper flakes, salt, and pepper.

  7. Pour the spice mixture over the tofu and bell peppers in the skillet.

  8. Toss the ingredients in the skillet to evenly coat them with the spices. Cook for an additional 1-2 minutes until the spices are fragrant and the ingredients are well combined.

  9. Remove the skillet from the heat.

Assembling the Dish:

  1. Transfer the Spiced Tofu and Bell Pepper Stir-Fry to serving plates.

  2. Garnish with fresh cilantro or chopped green onions for added flavor and color.
