Spiced Roasted Lentils are a nutritious and crunchy snack option that offers a burst of flavor and a satisfying texture. The combination of aromatic spices adds depth and warmth to the lentils, making them a great alternative to traditional potato chips or processed snacks.

INGREDIENTS

  • 1 cup dried green or brown lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Optional: Chopped fresh cilantro or parsley for garnish

INSTRUCTIONS

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. In a bowl, combine the rinsed and drained lentils with olive oil, ground cumin, ground coriander, smoked paprika, ground turmeric, cayenne pepper, salt, and pepper. Mix well to evenly coat the lentils with the spices and oil.

  3. Spread the spiced lentils in a single layer on the prepared baking sheet.

  4. Roast the lentils in the preheated oven for about 15-20 minutes, or until they are crispy and golden brown. Stir the lentils once or twice during roasting to ensure even cooking.

  5. Once roasted, remove the lentils from the oven and let them cool slightly.
