Salmon Croquettes
Salmon croquettes are flavorful and crispy seafood patties made with canned salmon, breadcrumbs, and various seasonings. INGREDIENTS
- 2 cans (6 ounces each) of canned salmon, drained and bones removed

- 1 large egg
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard

- Salt and pepper to taste
- 2-3 tablespoons vegetable oil for frying
INSTRUCTIONS
In a large mixing bowl, flake the canned salmon using a fork to break it into smaller pieces.
Add the breadcrumbs, finely chopped onion, bell pepper, egg, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper to the bowl with the salmon.
Mix all the ingredients thoroughly until well combined. The mixture should hold together when pressed.
Shape the mixture into small patties, about 2-3 inches in diameter, and place them on a plate or tray.
Heat vegetable oil in a frying pan over medium heat.
Once the oil is hot, carefully add the salmon croquettes to the pan, working in batches if needed to avoid overcrowding.
Cook the croquettes for about 3-4 minutes on each side or until they are golden brown and crispy.
Remove the cooked croquettes from the pan and place them on a plate lined with paper towels to drain any excess oil.
Serve the Salmon Croquettes hot with your favorite dipping sauce, such as tartar sauce or lemon wedges.
