INGREDIENTS

  • 2 cups mixed vegetables (such as carrots, potatoes, peas, beans), diced
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons vegetable oil or ghee (clarified butter)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon Kashmiri red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, chopped (for garnish)

INSTRUCTIONS

  1. Heat oil or ghee in a large pan or pot over medium heat.
  2. Add the cumin seeds and let them splutter for a few seconds.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  5. Stir in the tomato puree and cook for a few minutes until the oil separates from the mixture.
  6. Add the coriander powder, turmeric powder, Kashmiri red chili powder, and salt. Mix well to combine the spices.
  7. Add the diced vegetables and mix them with the spice mixture until well coated.
  8. Pour in enough water to cover the vegetables and bring the mixture to a boil.
  9. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the vegetables are cooked through and tender.
  10. Sprinkle garam masala over the curry and stir gently to incorporate.
  11. Remove from heat and garnish with fresh cilantro leaves.
  12. Serve the Rogan Josh hot with steamed rice, naan bread, or roti.
