INGREDIENTS
For the Rice Paper Rolls:
- Rice paper wrappers (spring roll wrappers)
- Assorted fresh vegetables, thinly sliced (such as carrots, cucumber, bell peppers, lettuce, avocado, and bean sprouts)
- Fresh herbs (such as mint, basil, and cilantro)
- Cooked vermicelli noodles (optional)
- Cooked protein (such as cooked shrimp, chicken, tofu, or tempeh) – optional
- Rice paper dipping sauce (see below for recipe)
Rice Paper Dipping Sauce:
- 1/4 cup hoisin sauce
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1 teaspoon Sriracha or chili sauce (adjust to taste)
- Water (as needed to thin out the sauce)
INSTRUCTIONS
For the Rice Paper Rolls:
Prepare all the vegetables, herbs, and any protein you’re using by thinly slicing them. Keep them ready for assembling.
Fill a large shallow bowl or a wide plate with warm water. Make sure it’s not too hot to handle.
Dip a rice paper wrapper into the warm water for about 10-15 seconds until it softens. It should become pliable but not overly mushy.
Carefully lift the softened rice paper and place it on a clean, damp kitchen towel or a plate.
Layer your desired fillings in the center of the rice paper, leaving about an inch of space on each side.
Start by folding the bottom part of the rice paper over the fillings, then fold in the sides, and roll it up tightly.
Repeat the process with the remaining rice paper wrappers and fillings.
For the Rice Paper Dipping Sauce:
In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, minced garlic, and Sriracha or chili sauce.
If the sauce is too thick, you can thin it out with a little water until you reach your desired consistency.
