- Rice vermicelli noodles, cooked and cooled

INSTRUCTIONS
Rice Paper Rolls:
Prepare all the vegetables, tofu, and herbs by slicing them into thin strips and arranging them on a plate.
Fill a shallow dish with warm water. Dip one rice paper sheet into the warm water for about 10-15 seconds or until it softens. Place the softened rice paper sheet on a clean and damp kitchen towel.
Arrange a small portion of the sliced vegetables, tofu, fresh herbs, and a few rice vermicelli noodles in the center of the rice paper sheet.
Fold the sides of the rice paper over the filling. Then, fold the bottom edge up and roll tightly to encase the filling, similar to rolling a burrito.
Repeat the process with the remaining rice paper sheets and fillings.
Dipping Sauce:
In a small bowl, whisk together the soy sauce or tamari, rice vinegar, honey or maple syrup, sesame oil, and optional crushed red pepper flakes and lime juice.
Taste the dipping sauce and adjust the flavors to your liking.
Serve:
