INGREDIENTS

INSTRUCTIONS

Quinoa:

  1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa and a pinch of salt.

  2. Reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff the quinoa with a fork and let it cool.

Lemon-Herb Dressing:

  1. In a small bowl, whisk together lemon juice, extra-virgin olive oil, chopped herbs, minced garlic, salt, and pepper. Set aside.

Salad Assembly:

  1. In a large salad bowl, combine the cooked and cooled quinoa, drained chickpeas, diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, chopped fresh parsley, and chopped fresh mint (if using).

  2. Drizzle the prepared Lemon-Herb Dressing over the salad.
