Puri Bhaji is a popular Indian breakfast dish consisting of deep-fried whole wheat bread (puri) served with a spiced potato curry (bhaji). It is a flavorful and satisfying combination that is enjoyed across various regions of India. Puri Bhaji is often served with tangy chutneys, pickles, or yogurt on the side.

INGREDIENTS

For the Puri:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water (as needed for kneading)
  • Oil (for deep frying)

For the Bhaji:

  • 2 large potatoes, boiled and mashed
  • 1 medium onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)

INSTRUCTIONS

For the Puri:

  1. In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft and smooth dough.
  2. Cover the dough and let it rest for about 15-20 minutes.
  3. Divide the dough into small lemon-sized balls. Roll each ball into a thin circular shape using a rolling pin.
  4. Heat oil in a deep frying pan or kadai over medium heat.
  5. Carefully slide the rolled puri into the hot oil and fry until it puffs up and turns golden brown on both sides.
  6. Remove the puris from the oil using a slotted spoon and place them on a paper towel to drain excess oil. Repeat the process with the remaining dough.

For the Bhaji:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add asafoetida, chopped onion, and green chili to the pan. Sauté until the onions turn translucent.
  3. Add ginger paste, turmeric powder, red chili powder, and salt. Mix well and cook for a minute.
  4. Add the mashed potatoes to the pan and mix everything together. Cook for 2-3 minutes, stirring occasionally, until the flavors are well combined.
  5. Garnish with freshly chopped coriander leaves.

To serve:

Serve the hot and crispy puris with the flavorful potato bhaji. Squeeze some fresh lemon juice over the bhaji for added tanginess. Enjoy the Puri Bhaji as a satisfying breakfast or brunch option.

TIPS

  • Make sure the oil is hot enough before frying the puris to ensure they puff up properly.
  • Knead the dough well to achieve a smooth texture for the puris.

  • For a healthier version, you can make the puris using a combination of whole wheat flour and all-purpose flour or using a combination of wheat flour and semolina.
